Bacon cheeseburger meatloaf


A friend of mine posted this recipe on Facebook over the weekend, and as soon as I saw it, I knew we had to try it.  Sure enough, it was a huge hit with everyone in the family!  Here is the basic recipe:

I made only a handful of small tweaks to lower the carbs:

  • Skip the bread crumbs.  The meatloaf was a bit crumbly fresh out of the oven, and this may have been why, but I didn’t really care since it tasted so delicious!
  • Use Heinz’s low sugar ketchup, which is only 1g carb/Tbsp.
  • Do not put the French fried onions on the top.
  • Use half the bacon.  This saves a couple of carbs, although mostly I did it because I didn’t want to use up our entire bag of Costco crumbled bacon (this is a must have if you are low carbing – a HUGE bag of real crumbled bacon for about $7).  And after tasting it, I don’t think I’d use more in the future.  It was perfect just as it was. It’s still quite a bit of bacon, and it blended perfectly with the cheese flavor, which is really the dominant note.

Serve this with a big green salad on the side for a tasty dinner!
