Greek salad


Since I’m still on induction levels of carbs, I’m not adding any tomatoes to this salad.  But once I can have a few more carbs, I’ll put 6-8 sliced grape tomatoes in this.  It adds such a nice burst of sweetness to balance all the tart flavors!

Greek Salad

  • 2 Tbsp balsamic vinaigrette (I buy the generic Kroger brand, which only has 2g carb per 2 Tbsp – some have much more, so be sure to read the label)
  • crumbled feta to taste (I use about 1/4 cup)
  • 6-8 sliced kalamata olives
  • enough lettuce or lettuce mix for one salad

Mix all together and enjoy!
